While we take great care in every single coffee we roast, this coffee is one of our absolute favorites. The Las Damas de San Ignacio, which translates to "The Ladies of San Ignacio", is USDA certified fair trade and organic - but the most exciting aspect about this coffee is that the beans are grown, harvested, and processed by a solely woman owned and operated co-op. Founded in 1969, the founding principles of COOPAFSI (Cooperative Agraria “Frontera San Ignacio” Ltd) is gender equality and investing their business back into the women that make up their community and their families.
TASTING PROFILE
This coffee is truly a delight, it is light bodied and smooth with a mild and sweet flavor. It is quite mild in acidity and very aromatic with wonderful, sweet fragrances on the nose. Every one experiences coffee differently, but we taste notes of Orange, Honey and Brown Sugar.
